Ingredients:
400 ml of freshly squeezed orange juice (approx. 1 glass and a half).
Zest of one orange (only grate the orange-coloured part, the white part is bitter)
20 g sugar
3 tablespoons freshly squeezed lemon
360 ml of whipping cream (very cold)
Preparation:
In a saucepan over medium heat, mix the orange juice and lemon juice, add the sugar and stir until it comes to the boil. Boil for about three minutes and remove from the heat Add the orange zest and mix well. Leave to cool to room temperature and then put in the freezer to chill the mixture for about half an hour.Whisk the cream until stiff, and very gradually pour in the cooled mixture. Mix in enveloping movements with a spatula.Pour the whole mixture into a container and put it in the freezer for about an hour.After this time, with a hand blender, beat the mixture for a few minutes and put it back in the freezer. Repeat this process two/three more times until the ice cream is creamy.
