-How is the dehydration process?
We collect the fattest persimmons, leaving a small piece of nipple to hang them on a string, then we wash and peel them and hang them on a string next to each other in the open air to dry, at night we put them under cover so that they do not get damp from the dew. After a few weeks hanging them we press them to dry them faster.
