In the kitchen you can use in different ways, especially in baking: Pumpkin Cake, Custard, pumpkin, Waffles Pumpkin (typical of Valencia in Fallas) etc

My advice to you is in the Oven.

Split the pumpkin into two halves, remove all the seeds, put the oven to 200ºC. 45 minutes.

For the more sweet tooth you can sprinkle them with sugar before putting them in the oven.

Serve at room temperature.
