The orange tree wood, coming from our organic fields, when we prune the smaller branches we crush them in the tractor, it is transformed into compost, food for the tree, the fattest firewood is used above all to make paellas, it gives it a special aroma, also, barbecues and to warm us in winter,  authentic Valencian paella.

Use a large, flat paella pan or cauldron.

First add the vegetables, green beans, beans, garrofo, etc., add the chicken and the rabbit in small pieces, add salt and about 4 spoonfuls of olive oil, then put the chicken and the rabbit in the cauldron, until they are well browned, this way it will give more flavour to the rice.

Add the red pepper and fry it, then fry the grated tomato for 2-3 minutes.

It is best to add a sprig of rosemary and thyme to the frying.

Add the rice to the pot and stir to spread it well.

Add the water to the cauldron, and saffron to taste, and let it boil gently, without stirring, for about 20 minutes, then simmer until the rice is tender and has absorbed the liquid.

Remove the pan from the heat, cover with a cloth or a sheet of newspaper and leave the paella to stand for 5 minutes before serving.
