Tigernuts from Valencia 1 kg (chufa)
Ecological Tiger with its D.O. Tigernut from Valencia.
For salads, cooking, baking, frying or preparing an Horchata.
Organic Tiger Nuts 250 g, sugar 150 g, 1 liter of water.
1. Wash the tigernuts, put them in a large bowl. Cover well with water and soak for 24 to 36 hours to rehydrate, change the water if it becomes cloudy.
2. Throw out the water, wash well under the tap and drain the tigernuts. Put the drained tigernuts in the mixer and add 250 ml of fresh water and grind until you get a milky paste.
3. Next strain well with a fine clean napkin, or through a very fine strainer, squeezing well to extract all the juice.
4. Add the rest of the water (750 ml), the sugar and mix well with the mixer, cool until serving.
The tiger nut horchata should be served very cold, almost frozen, in tall glasses. If you want you can even put it in the freezer a few minutes before serving it. Remember to stir it well just before serving.
