The Protected Designation of Origin Alicante is located on the east coast of Spain, and enjoys a warm climate and the beneficial influence of the Mediterranean throughout the year. The climate is continental in the mountainous inland areas.
Monastrell (from organic farming) 100%.
Selection of old vineyards of low production from organically farmed vineyards in the south of Alicante. Destemmed and gently crushed. Vatting in self-emptying tanks where cold pre-fermentation is carried out. Maximum fermentation temperature 26ºC. Malolactic fermentation in vats. Finally, it is refined with a light touch of medium plus toasted American oak for subsequent bottling.
Pairing: Baked rice, banda rice, barbecue, roasted blue fish and tapas.
Serving temperature: 16ºC
Preparation: Manual harvest, after separation of the scrape and soft crushing. Subsequently, pulp, skin and must were fermented in stainless steel tanks at a controlled temperature of 26ºC.
