Organic Valencian young red wine
Varieties: 100% Monastrell
Young wine, coming from fresh terroirs, clayey and with powerful silts. Very influenced by the Mediterranean breezes, it is fresh, Mediterranean, very aromatic, intensely fruity and spicy. True reflection of a monastrell with a Mediterranean expression, from 25-year-old vineyards in a rigorous dry land. The aromas of sweets, strawberry and licorice venture a wide mouth of sweet tannins. Served at 14ºC it shows as a sweet wine, ideal for appetizers.
Tasting notes: Cherry red, with violet reflections. On the nose ripe red fruit, highlighting floral and balsamic notes. The palate ends alive, broad and pleasant, highlighting its acidity that perfectly harmonizes the wine. With a good journey, a pleasant post-taste, pure candy stands out.
Pairing: Baked rice, banda rice, barbecue, roasted blue fish and tapas.
Serving temperature: 16ºC
Preparation: Manual harvest, after separation of the scrape and soft crushing. Subsequently, pulp, skin and must were fermented in stainless steel tanks at a controlled temperature of 26ºC. After an average maceration for 9 days with careful pumping over in order to extract the maximum aromatic load and a sweet tenicity. It was pressed before the end of the alcoholic fermentation.
