A cheese that is very stylish, features a cut and compact texture, of a straw yellow colour.
Remains healing for 9 months and is mature with care, following an ancient gastronomic tradition, is both an art and a way of life.
This cheese represents our belief that "the natural food tastes better".
Qualities that have been awarded in the 2012 edition of the World Cheese Awards with a gold medal in the cheese category for sheep's milk and with the maximum award as a "Super Gold" at the World Cheese Awards 2015. And two “Cinch Gold” (2008 and 2010).
