Ingredients:

For 4 people
12 duck wings which are preserved in syrup or candied
2 potatoes
2 spring onions
2 carrot
250 gr orange jam
50 gr. rucola
12 very small tomatoes (also named cherry tomatoes)
4 cloves of garlic

 

water
vinegar
olive oil
salt
parsley






Elaboration:

Peel the potatoes, cut them half-moon shaped. Put  them in a frying-pan and candy them with a lot of hot olive oil on a low gas. Add the spring onions which have been previously cut into pieces.

Slice the carrot thinnly and sauté them in a frying-pan. Add the jam and cook. Add a bit of water if it gets too thick. Set aside.

Bake the duck wings at 200ºC for 15 mins.
Season the rucola with vinegar, olive oil and salt.

Put in each plate a bit of jam, then the duck wings on the jam and the sweetened potatoes by their side. Then, a bit of rucola and, finally, decorate with cherry tomatoes and parsley.
