For 4 people
One 1,200 kg cleaned duck
5 oranges
1/2 lemon
2 glasses of both
1 glass of white wine
2 onions
1 carrot
1 green pepper
1 leek


1 tomato
3 claves of garlic
2 spoonfuls of flour
1 small glass of orange liqueur
several orange slices
1 small bunch of grapes
a piece of butter
olive oil


Chop all the vegetables and put them on an oven platter or serving dish.

Season the already cleaned duck and put in its inside half an orange. Squeeze the rest of oranges and half a lemon on the duck and drench it with the both and white wine. Add a squirt a lot of olive oil and bake at 175º for an hour aprox. Until the duck is cooked.

Put sauce on it from time to time so it doesn´t dry up.

Afterwards, put the duck away and prepare the sauce with the rest of the ingredients. In order to do so, heat the flour and the orange liqueur on a high gas for 5 mins. Next, put this througle a grinder or mincer. Cut the duck in two halves and serve it without its bones. Season it with its own gravy. The garnishing will be the orange slices and grapes which we must saut in butter.
